Ingredients for Butter Bean Salad

Fresh high fibre butter bean salad tossed with herbs, olives, artichokes, and lemon Dijon dressing

Salad:

  • ½ small red onion, peeled and thinly sliced
  • 4 tbsp apple cider vinegar
  • ¼ tsp salt
  • 2 x 340 ml jars butter beans, rinsed and drained
  • 170 ml jar artichoke hearts, rinsed, drained, and chopped
  • ½ cup Castelvetrano olives, pitted and chopped
  • ⅓ cup fresh mint, finely chopped
  • ⅓ cup fresh parsley, finely chopped

Dressing:

  • 4 tbsp olive oil
  • 1 tbsp shallot, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tsp Dijon mustard
  • ¼ tsp salt

How to Make Butter Bean Salad

In a small bowl, combine the sliced red onion, apple cider vinegar, and salt. Toss well and let sit for about 30 minutes, stirring occasionally.

In a large bowl, combine the butter beans, artichoke hearts, olives, mint, parsley, and the pickled onions. Add a small amount of the pickling vinegar if desired for extra tang.

In a small bowl or jar, whisk together the olive oil, minced shallot, lemon juice, lemon zest, Dijon mustard, and salt until well combined.

Pour the dressing over the salad and toss gently to combine.

Taste and adjust seasoning if needed.

Serve immediately or chill slightly before serving.
