Naturally sweet no bake mango energy bites coated in coconut flakes
1 cup dried mango, unsweetened
1¼ cups raw cashews
¼ tsp salt
Zest of 1 lemon
10 Medjool dates, pitted
1⅓ cups unsweetened coconut flakes
2 tbsp unsweetened coconut flakes (for topping)
Place the dried mango in a heat safe bowl and cover with hot water. Soak for 10 minutes, then drain well.
Add the cashews, salt, and lemon zest to a food processor. Pulse until finely ground.
Add the soaked mango, dates, and coconut flakes. Process until the mixture forms a sticky paste.
If the mixture feels too sticky, add a little more coconut. If it seems too dry, add one or two additional dates.
Transfer the mixture to a parchment paper lined baking sheet or dish. Place another sheet of parchment paper on top and use a rolling pin to roll the mixture into an even layer.
Remove the top sheet of parchment paper and sprinkle with the remaining coconut flakes. Gently roll again to press the coconut into the surface.
Refrigerate for 1 hour or until firm.
Slice into squares or bites and enjoy.
Store Mango Energy Bites in an airtight container in the refrigerator for up to 1 week.
For longer storage, keep them in the freezer for up to 3 months and thaw as needed.
