1 shallot, minced
1 tbsp. ginger, minced
1 tbsp. olive oil
1. Prepare the broth
In a saucepan over medium heat, combine the chicken broth, coconut milk, coconut aminos or soy sauce, ginger, turmeric, rice vinegar, and halved shallot.
Bring to a boil, then reduce the heat and simmer for 30 minutes while preparing the remaining ingredients.
2. Cook the rice
Prepare the rice according to package directions.
3. Prepare the vegetables
Steam the carrots, broccoli, bok choy, and zucchini until they reach your preferred tenderness.
4. Cook the chicken
In a large frying pan over medium heat, add olive oil and minced shallot. Cook until translucent.
Add the ginger and ground chicken, stirring to combine. Allow the chicken to begin browning before stirring again. Continue cooking until browned and fully cooked.

Pour the warm broth over the ingredients and finish with fresh cilantro, green onions, and a squeeze of lime juice.
Serve warm and enjoy!
Store leftover chicken, rice, vegetables, and broth in separate airtight containers in the refrigerator whenever possible. Keeping the components separate helps preserve their texture and makes reheating easier.
Refrigerate leftovers promptly and use cooked chicken and vegetables within 3 to 4 days. Cooked rice requires particular care: cool it quickly, refrigerate promptly, and follow food safety guidance for storage and reheating.
When ready to enjoy, reheat the chicken, broth, and vegetables thoroughly. Add the fresh cilantro, green onions, and lime juice just before serving.
This recipe can also be prepared in advance by making the broth and chicken ahead of time, then assembling individual bowls when you’re ready to eat.
A balanced meal can bring together protein, vegetables, carbohydrates, and a variety of nutrients that support everyday health and well-being.
Ginger adds a warming, aromatic flavour to the broth. It contains naturally occurring plant compounds, including gingerols, that have been studied for their antioxidant and anti-inflammatory properties. However, consuming ginger as part of a meal should not be considered a treatment for inflammation or lupus symptoms.
Turmeric gives the broth its golden colour and earthy flavour. It contains curcumin, a naturally occurring compound that has been studied for its potential effects on inflammation. Research into its health benefits is ongoing, and the amount used in cooking should not be expected to provide therapeutic effects.
Ground chicken provides protein, an essential nutrient that supports muscle maintenance, tissue repair, and normal body functions.
Vegetables such as broccoli, carrots, bok choy, and zucchini contribute dietary fibre, vitamins, minerals, and a variety of beneficial plant compounds. Including a range of colourful vegetables is one way to support a varied and balanced diet.
Coconut milk creates a creamy, satisfying broth without the need for dairy. It also contains saturated fat, so choosing lighter varieties and considering overall dietary balance can be helpful.
Rice provides carbohydrates, an important source of energy for the body. Brown rice can also be used for additional fibre, depending on your preferences and dietary needs.
Fresh cilantro, green onions, and lime juice add brightness and flavour to the finished bowl, making it enjoyable without relying entirely on added salt.
For individuals living with lupus, nutritional needs may vary depending on symptoms, medications, and other health considerations. While no single food can prevent lupus flares or treat the disease, balanced eating can be an important part of supporting overall wellness.

One of the best things about this recipe is how easily it can be adapted using ingredients you already have at home.
Switch up the vegetables: Try mushrooms, spinach, snap peas, bell peppers, or cauliflower for additional colour, texture, and variety.
Choose your preferred protein: Substitute ground chicken with ground turkey, tofu, or another protein that suits your dietary preferences. Adjust cooking methods and times accordingly.
Try different grains: Replace white rice with brown rice, quinoa, or rice noodles for a different texture.
Adjust the broth: Add a little extra chicken broth for a lighter consistency or more coconut milk for a creamier finish.
Add extra flavour: Include garlic, additional ginger, or a sprinkle of chili flakes if you enjoy a little heat.
Make it gluten free: Choose certified gluten-free coconut aminos or gluten-free tamari instead of regular soy sauce, and check the labels of other packaged ingredients.
Use what you have: This recipe is a great opportunity to incorporate leftover vegetables and reduce food waste.
Whether you’re preparing a comforting weeknight dinner or looking for a new way to enjoy fresh vegetables, this Ginger Turmeric Chicken Broth Bowl offers a delicious combination of warmth, flavour, and flexibility.
