Hummus Pasta Recipe | Creamy Plant Based Pasta

This Hummus Pasta Recipe is a creamy, flavourful weeknight meal packed with plant based protein and fibre. Roasted cherry tomatoes and shallots add sweetness and depth of flavour, while hummus creates a rich, creamy pasta sauce without the need for dairy or extra preparation.

Made with chickpea pasta, spinach, sundried tomatoes, fresh basil, and your favourite hummus, this simple meal comes together quickly and is easy to customize. It is a nourishing and filling option for busy evenings when you want something satisfying without spending hours in the kitchen.

Ingredients for Hummus Pasta

This creamy hummus pasta combines roasted cherry tomatoes, fresh spinach, basil, sundried tomatoes, and hummus for an easy plant based meal.

Ingredients:

  • 1 pint cherry tomatoes
  • 1 shallot, finely diced
  • 1 tbsp olive oil
  • Pinch of salt
  • 300 g chickpea pasta or regular pasta
  • 280 to 300 g of your favourite hummus, such as caramelized onion hummus
  • ½ cup sundried tomatoes, chopped
  • 2 cups spinach, chopped
  • ⅓ cup fresh basil, chopped

How to Make Hummus Pasta

Preheat the oven to 350°F (175°C).

In an oven safe baking dish, combine the cherry tomatoes, diced shallot, olive oil, and a pinch of salt. Toss until the tomatoes and shallot are evenly coated.

Roast for approximately 20 minutes, or until the cherry tomatoes begin to blister and soften.

Meanwhile, cook the pasta according to the package directions. Drain well and transfer the cooked pasta to a large serving bowl.

While the pasta is still hot, add the hummus, chopped spinach, sundried tomatoes, roasted cherry tomatoes and shallots, and fresh basil.

Stir gently until everything is well combined and the spinach has slightly wilted. The hummus will coat the warm pasta to create a creamy sauce.

Serve immediately and enjoy!
