8 chicken thighs, boneless, skinless,
4 small yams,
4 corn cobs
2 medium zucchini
300g green beans, trimmed
¼ c. olive oil
¼ c. dijon mustard
3 tbsp. Maple syrup
1 tbsp. apple cider vinegar
1 tsp. Salt
Preheat the oven to 350 F.
Cut corn cobs into quarters. Slice zucchini into 1 inch rounds. Peel and cut yams into ½ inch rounds.
On two parchment paper lined baking sheets, arrange chicken and vegetables in a single layer.
Prepare the sauce and brush over the chicken and vegetables.
Bake for 45 min. Or until chicken is 165 degrees and yams are tender. Enjoy!
