  • 3 stalks celery, diced finely

  • 1 medium sweet onion, diced

  • 1 lb ground turkey

  • 3 cups frozen, cubed butternut squash

  • 1 large apple (or 2 small), diced

  • 2 tbsp fresh sage

  • 1 tsp fresh thyme or ½ tsp dried

  • 1 tsp fresh rosemary or ½ tsp dried

  • 1 tsp salt

  • ⅓ cup dried cranberries (optional)

Instructions

1. Preheat the oven to 425°F (220°C).
2. Sauté vegetables in a large skillet over low–medium heat until the onion and celery soften.
3. Add the turkey and seasonings: Stir in the ground turkey, squash, apple, sage, thyme, rosemary, and salt. Cook for 5–7 minutes, until the turkey is partially browned.
4. Transfer to baking dish: Spread the mixture evenly in a parchment-lined casserole dish.
5. Bake for 20 minutes, or until the top begins to brown and the squash is tender.
6. Serve warm and enjoy.
