Ingredients

  • 1 cup Medjool dates, pitted

  • ½ cup oat milk

  • ¼ cup peanut butter

  • 1 tsp vanilla

  • 1 ¼ cups rolled oats

  • 1 cup shredded coconut

  • ¼ cup ground flax

  • ½ tsp salt

  • ⅓ cup chocolate chips

Instructions

Step 1

In a heat-safe bowl, cover dates with boiling water for 15 minutes. Drain and set aside.

Step 2

Preheat oven to 350°F. Line an 8×8 cake pan with parchment paper.

Step 3

In a large bowl, combine oats, coconut, flax, and salt.

Step 4

Add soaked dates and oat milk to a high-speed blender or food processor and blend until smooth.

Step 5

Add peanut butter and vanilla and blend until combined.

Step 6

Combine wet ingredients with dry, mix well, and spread evenly in the prepared pan.

Step 7

Sprinkle chocolate chips over top, press them gently into the mixture, and bake for 25 minutes.

Step 8

Allow to cool completely before cutting into bars. Store in an airtight container in the fridge.
