For the fruit base
5 cups rhubarb, diced
2 cups strawberries, diced
1/4 cup maple syrup
2 tablespoons fresh lemon juice
2 tablespoons tapioca flour, arrowroot flour, or cornstarch
For the crumble topping
1 cup rolled oats
2/3 cup almond flour
2/3 cup chopped almonds, pecans, walnuts, or unsweetened coconut flakes
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup maple syrup
1/4 cup coconut oil (melted) or melted butter
Preheat oven to 350°F (175°C). In a large bowl, combine rhubarb, strawberries, maple syrup, lemon juice, and flour. Mix well.
Spoon the fruit mixture evenly into eight 250 ml mason jars or small ramekins. In a separate bowl, mix all crumble topping ingredients until well combined.
Top each jar with a layer of the crumble. Place jars on a baking sheet and bake for 40 to 50 minutes, or until golden and bubbling.
Let cool slightly before serving. Enjoy warm or chilled!
Serve as a dessert or sweet snack with a dollop of coconut yogurt or Greek yogurt. Pairs beautifully with fresh mint or a splash of cream.
This crumble skips the refined sugar and flour in favour of naturally sweet ingredients like fruit, maple syrup, and fiber-rich oats. Almonds and coconut oil provide healthy fats, while rhubarb offers gut-supporting fiber and vitamin K. It’s a delicious way to support your health while still enjoying dessert.
