Ingredients:

  • 1 ½ cups plant milk
  • 1 cup canned coconut milk
  • 2 tablespoons maple syrup or date syrup, or 3 pitted Medjool dates
  • 2 tablespoons nut butter
  • 2 teaspoons vanilla
  • 2 teaspoons Ceylon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • ⅔ cup chia seeds
  • 2 large bananas, mashed
  • 4 tablespoons walnuts, chopped

Instructions

Blend the base:
Combine plant milk, coconut milk, maple or date syrup (or Medjool dates), nut butter, vanilla, cinnamon, nutmeg, cloves, and salt in a blender. Blend until smooth.

Add chia seeds and chill:
Stir in the chia seeds and pour the mixture into a large mixing bowl. Place in the fridge for 1 hour.

Stir and add bananas:
Remove the mixture from the fridge, stir well, then add the mashed bananas and mix until combined.

Portion and top:
Divide the pudding amongst 4 small jars and top with chopped walnuts.

Chill overnight:
Refrigerate overnight to allow the pudding to fully thicken. Enjoy chilled!

  • Store in airtight jars in the fridge for up to 4 days.
