This loaf is oil free, naturally sweetened with ripe bananas and a touch of honey, and it skips inflammatory grains, dairy, and refined sugars and uses coconut and tapioca flour — staples in the Autoimmune Protocol. Moist, subtly spiced with cinnamon, and topped with optional dairy-free chocolate chips to feel indulgent, this banana bread is perfect for breakfast, snacks, or a cozy afternoon treat.
4 Bananas
3 Eggs
¼ c. Honey
2 tsp. Vanilla
½ c. Coconut Flour
3 tbsp. Tapioca Flour/ Gluten Free Flour
2 tsp. Cinnamon
1 tsp. Baking powder
½ tsp. Baking soda
¼ tsp. Salt
¼ c. Dairy Free Chocolate Chips (optional)
In a large bowl, mash banana. Add eggs, honey and vanilla. Whisk until combined.
Add coconut flour, tapioca flour, cinnamon, baking powder, baking soda and salt. Stir to combine.
Pour into a greased or parchment lined loaf pan. Top with chocolate chips. Bake for 50 min or until a toothpick inserted comes out clean. Allow to cool for 10 minutes before transferring to a wire rack. Wait until it has cooled completely before slicing.
