350g Firm Tofu
2 tbsp Lemon Juice
Zest of 1 Lemon
1 tbsp Olive Oil
1¼ tsp Apple Cider Vinegar
1¼ tsp Salt
⅓ cup Fresh Dill
¼ cup Fresh Parsley
¼ cup Fresh Basil
½–1 small Shallot, minced
Add all ingredients to a food processor.
Blend until smooth.
Taste and adjust seasoning if needed.
Serve with your favourite crackers, fresh vegetables, on a sandwich, or drizzled into a salad.
