Recipe: Southwestern Stuffed Acorn Squash

Serves: 6


3 acorn squash, ( ¾-1 pound each)
5 ounces bulk low-fat turkey sausage
1 small onion, chopped
½ medium red b1 clove garlic, minced
1 tablespoon chili powder
½ medium red bell pepper,chopped
1 teaspoon ground cumin
2 cups chopped cherry tomatoes
1 15-ounce can black beans, rinsed (see Tip)
½ teaspoon salt
